In the winter you’ve got to be truly creative to come up with fresh, interesting salad options. As someone who usually brings a salad for lunch at my desk, some of those winter salads got pretty boring around mid-March.
But in the summer? So much bright produce at the grocery and farmer’s markets, it practically begs to be chopped up and tossed in a salad! Inspiration is everywhere, and this salad just tastes like summer.

Recipe Advice: If corn is in-season, grilled corn (off-the-cob) would be a delicious substitute! If not, simply use frozen corn.
