A few weeks ago, mid-moving-chaos, this Bon Appetit recipe manifested itself out of semi-bare kitchen cabinets and a need to find consistency amidst the chaos. You see, I seem to have developed this habit of baking at times when I feel like things are beyond control. A coping mechanism of sorts.
The first time I remember doing it was during wedding planning. There were a lot of deadlines and dates approaching related to the wedding. It had stopped feeling fun, and started feeling like a lot of pressure. Before I really knew what happened, I was meeting with our stationery designer and handing her a loaf of homemade bread.
I should try to remember this habit for the future because it really does make me feel accomplished to pull something out of the oven that tastes delicious. In this case, Blueberry Skillet Cornbread. Minimal ingredients, the only fresh thing you need being the blueberries (but I bet you could use frozen in a pinch.) And I can pass this off for breakfast, snacking, or dessert. Now that’s a chameleon of a recipe!
