Fact: It is cold. Everyone’s talking about it, everyone’s freezing, the entire United States is basically a giant walk-in freezer. This is no longer news, its just fact.
As a result of this fact, I have endured not one, not two, but now THREE fire alarms in the past 24 hours due to burst pipes. After evacuating multiple buildings and freezing on sidewalks, I was ready for a calm, cozy night in with a hot dinner. Nay, I deserved a hot dinner. I had earned it.
Not wanting to ruin my healthy intentions for 2014 (or yours) just yet, I present this smashingly good recipe for Lemony Risotto with Chicken. I wanted something that felt rich and would really be filling, and this delivers on all counts without the use of butter, cream, or even more than 1 tablespoon of olive oil. You can even eliminate the cheese topping, if you dare, and make it *that* much healthier. Me, I vote for moderation and add the cheese. But that’s your call.
It is possible that some people stopped reading this upon mention of the intimidating word “risotto”. Are you still with me? Way to go! Risotto doesn’t have to be scary. In fact, this is kind of a fake-out risotto. Can you push rice around in a pot and then pour wine? Ok. You can make this risotto.
Oh, and did I mention this is a one-pot meal? Yup. You’re welcome. This is key – you gotta have a cast iron skillet, or something that is oven-proof. Otherwise you’ll have two dirty dishes. It can be done, but one dish is just so awesome when you can get away with it.
So there you have it. Hearty, delicious dinner, fairly simple to prepare and tastes like springtime. For some reason lemon and scallions say spring to me – bright and flavorful. Perfect for these cold – really cold – winter nights. Bon Appetit!
